Asparagus salad with new potatoes, peas and spinach

Place potatoes in a medium saucepan and cover with one inch of water. Bring to a boil and cook for about 15 minutes, or until the tip of a knife easily pierces through a potato. Drain the potatoes and let them cool until they’re almost room temperature.

Refill the saucepan you used for the potatoes (here’s to fewer dishes!) with salted water and bring it to a boil. Prepare an ice bath, a large bowl with ice and water in it. Trim the tough ends off the asparagus. Once the water is boiling, add the asparagus. 8 minutes later, add the peas. Two minutes later, drain both together.

Meanwhile, chop some spring onions, chives and mint. Put everything (including vegetables) in a large bowl and add some fresh new spinach and a few cooked eggs.

For mustard vinaigrette put some white balsamic vinegar, lime juice, olive oil, salt, pepper and a spoon of dijon mustard, whisk well and put over vegetables.

Unbelievable!

Zdaj je resnično prišel čas slovesa od špargljev. Do naslednjega aprila. Takrat jih bomo v našo družino zopet posvojili za 2 meseca.

Tale solata je zmagovalna. Nasitna, okusna, zdrava, mlada, sveža, sezonska in kar je še takšnega.
Skuhala sem mladi krompir Kifeljčar (seveda z olupkom), mladi grah sem zgolj za 2 minuti pomočila v osoljen krop, tudi šparglje sem predhodno skuhala.
V veliki posodi sem zmešala šparglje, krompir, grah, 3 olupljena in narezana trdo kuhana jajca ter nekaj sveže mlade špinače. K temu sem dodala še sesekljan drobnjak, mlado čebulico in sesekljano meto. Vse pomladanske posladke sem prelila z dresingom iz olivnega olja, belega balzamičnega kisa, limete in dijonske gorčice – z dodatkom soli in popra.
Tako hude kombinacije solate že dolgo nisem jedla. Posebej meta je v kombinaciji z grahom poskrbela za presežke prve vrste!
